This wine is a blend of one-third each of Sauvignon, Chardonnay, and Fié Gris. "Frileuse," which translates to "little cold one," is an apt name for this frost-prone 3.8-hectare site at the top of the Tue-Boeuf estate. The site features three varieties, including Fié Gris, the historical name for Sauvignon Gris, a Sauvignon variant known for its dusty-rose-colored skins and softer flavor profile compared to the more common Sauvignon Blanc. The vines, ranging from 15 to 55 years old, with the majority between 20 and 35 years, are planted in predominantly sticky clay and flint soils. The Puzelats cultivate the vineyard organically and harvest the grapes by hand. The bunches are partially left in whole clusters and partially destemmed, undergoing a 2-3 day maceration to initiate spontaneous fermentation with indigenous yeasts and without added sulfur in large oak tanks. The wine matures for 8-9 months in used demi-muids and Burgundy barrels, with occasional lees stirring and no racking. Finally, it is bottled unfiltered and with minimal sulfur.
