'Susucaru' underwent fermentation with only native yeasts and had a 10-day skin contact period, along with complete malolactic fermentation in epoxy tanks. Only minimal filtration was used before bottling it unfined, and no sulfur was applied either in the vineyard or the cellar. This unique blend is made up of native Sicilian grapes, including the white varieties catarratto and muscat blanc à petits grains, complemented by the red grape, nerello mascalese. This isn't your typical light-pink rosé. Instead, it leans more towards the profile of light red wines (Heads up, Jura red wine aficionados!). It's aromatic, refreshing, has a lovely texture, and pairs excellently with a wide range of dishes. Certified as organic, it's a low-intervention/natural wine and is vegan-friendly.
