This Garnatxa Blanca displays a light yellow golden hue, with delightful notes of apple, Asian pear, fennel, and a hint of sea spray. On the palate, it reveals fresh herbs and white pepper aromas, leading to flavors of salty lemon and chamomile. The wine has a medium body and a harmonious tension that makes it both mouthwatering and luscious. The winemaking process involves 70% destemmed grapes and 30% whole cluster. About 70% of the first wine is drained off, while 30% of the juice remains in contact with all the skins for an extra 3 days to initiate fermentation and prevent oxidation. After pressing, the juice and skins undergo native fermentation, followed by racking back into a tank to rest on its lees for 6-7 months, enhancing its complexity and texture.
