A single-vineyard Xarel·lo from Penedès, made with 30% of the wine spending 40 days on the skins and the remainder direct-pressed. While the variety is best known for its role in sparkling wine, still Xarel·lo has truly come into its own here. Medium-bodied and dry, with a subtle tannic grip, it pairs beautifully with xató.
