Brezo Tinto is primarily crafted from Mencía grapes, supplemented with a touch of Garnacha Tintorera sourced from Horta and Villafranca del Bierzo. The wine-making process involves a blend of 90% de-stemmed grapes and 10% whole-cluster, undergoing fermentation with wild yeasts in stainless-steel containers, and matured on its lees within the same vats. The result is Brezo Tinto: a vibrant red wine imbued with fresh, ripe, floral, and spicy undertones. It pairs harmoniously with various meats, notably sausages, game, and pork-based dishes.
