This wine comprises 60% Chardonnay and 40% Sauvignon Blanc from Radikon. The grapes are sourced from organically farmed vineyards with notably low yields. After being hand-harvested, they undergo a gentle pneumatic pressing. Fermentation takes place in old Slavonian oak vats using native yeasts. The wine then macerates with its skins for about three months, without any temperature control or added sulfur. Following this, it's aged on lees in large Slavonian oak casks for 3-4 years, getting racked twice a year. Finally, it's bottled without the addition of sulfur and without filtration. The wine is then left to age in bottles for several more years before it's released to the market.
