The Rosso Cà del Merlo and Valpolicella Classico Superiore are similar, traditionally released together, but the Rosso 'Cà del Merlo' now staggers due to extended aging. Francesco notes both undergo ripasso processing and age for seven years in Slavonian oak, but they differ in grape composition. Rosso Cà del Merlo, a unique blend of 55% Corvina and Corvinone, 15% Rondinella, 10% Cabernet, 15% Merlot, and 5% Nebbiolo, Croatina, and Sangiovese, is the only single-vineyard wine at Quintarelli. Named after a hill near their home, it features rich flavors of blackcurrant, mint, sage, and spices, offering a voluptuous, fruit-forward profile.
