Originating from the same vineyards and harvest, Ruscum's distinctiveness comes from its juice's prolonged contact with the skins, exceeding two weeks. Whereas Coenobium is reminiscent of autumn, Ruscum is its winter counterpart, always presenting a richer and more substantial profile. It features flavors of apricot jam, white pepper, grapefruit peel, and gunflint, leading to a palate that is concentrated and almost oily in texture. Its lively acidity adds to the wine's overall approachability and charm.
