Eduardo Torres Acosta is a young winemaker from Tenerife who moved to Sicily in 2012, drawn by the shared volcanic soul of Mount Etna and his native Canary Islands. After working with Arianna Occhipinti and Passopisciaro, he vinified his first vintage in 2014 and, by 2018, converted a small garage on Etna into his winery. Predominantly Carricante with small amounts of local varieties, the grapes are hand-harvested and spontaneously fermented in concrete without temperature control, followed by a brief two-day skin maceration. The wine is aged in concrete and old oak, resulting in a creamy yet saline profile, marked by clean volcanic minerality. A natural match for seafood.
