This organic red wine is predominantly crafted from Cinsault grapes, complemented by a touch of Grenache. Following a manual harvest, the sorting process occurs both on the estate and in the cellar. The grapes are carefully chilled overnight before being gently transferred to vats using gravity. A maceration period of 5 days ensues, followed by a delicate gravity-assisted pressing. The resulting juices are then carefully transferred to old barrels, aged for over 10 years. The wine further matures in concrete barrels, allowing its flavors to develop and evolve.
