Manuel employed a mix of guía and quiotudo agaves to forge this outstanding rendition of a contemporary classic ensamble, or field blend, sourced from Logoche. This tradition of integrating both wild and cultivated agave in the same baking and fermenting process has deep roots, capturing not only the distinct tastes and scents of the region but also the agricultural techniques cherished by local farmers and palenqueros in the vicinity of San Luis Amatlán. As is the case with most of his creations, Manuel collaborated with his wife, Nacha, in crafting this batch.
