This blend combines Dolcetto and Barbera, enhanced by a hint of Nebbiolo for added structure, sourced from vineyards surrounding the Santa Maria cellar. Each varietal undergoes natural fermentation in stainless steel before being combined and aged for around six months. The Nebbiolo is matured in cask, undergoing spontaneous malolactic fermentation. The blend is finalized in the late Spring post-harvest for bottling, preserving the unique characteristics of each grape.
