This wine, nicknamed sheep's tail because of how its grapes bunch up, was left with its skins for about two weeks and then aged for eight months in some cool Hungarian oak barrels. At the same time, they did something similar with Rhein Riesling and Savagnin grapes, but those stayed with their skins in these special tanks for like four months. This whole thing started as an experiment by this really skilled winemaker who thought of mixing these two types of orange wine together. Now, it's kind of their thing for future batches. They call the wine Bipolar because it kept changing every day while they were figuring it out.

It tastes like a mix of sweet honeysuckle, tangy quince, zesty lemon, and a bit of herbs, all rounded out in a medium body that sticks with you for a while.
