Vetter Sylvaner 2017 (750ml)

A killer “basic” Sylvaner from Stefan; ultra-fresh florality and absolutely glowing with a bright, detailed and complex fresh-sour citrus, from lemon skin to lemon curd developing into tart pineapple. The palate is saturating, refreshing and structured, the citrus skin studded with a garden of herbs, sea air and a distinctly chalky minerality.

Vetter’s technique is worth noting, as it’s unique. The basic Sylvaner is sourced from younger vines around the terraced vineyard. The grapes are whole-cluster pressed without any maceration or crushing and put directly into old/neutral barrels (for vintage 2017 Stefan made 3,500 liters of this wine). The wine is topped up while in barrel, but not sulfured. The wine was racked once in August (so 11 months in barrel) and then bottled in October. Roughly 15ppm SO2 only at bottling; not fined or filtered.
