Spanning over 0.6 hectares, this vineyard, aged 55 years, cultivates Grolleau and Gamay grapes in soils rich in flint and clay. Vegetation is intentionally grown between the vine rows, and only organic methods are used for their care. Harvesting of these grapes is done by hand from September to October, and they are processed whole, without removing stems, before being directly pressed. The grapes are then transferred to stainless steel vats, initiating natural fermentation with wild yeasts, a process that unfolds over three weeks without regulating the temperature. After fermenting, the wine settles in these tanks for roughly two months, without being filtered. When disgorging, only a tiny quantity of sulfur dioxide is added to the wine, at a concentration of 10mg/L.
