Real Minero Sierrudo is made by maestro Edgar Angeles with agave Sierrudo, which is a lighter hued subspecies of the massive agave Americana (related to Arroqueno and Sierra Negra). In Santa Catarina Minas, this agave takes from 18 to 25 years to mature. Two decades ago, the Sierrudo variety was nearly extinct in this region. It’s thanks to the efforts of mezcaleros with a preservationist perspective, like the Angeles family of Real Minero, that this agave is still available today. As with all Real Minero, this agave is harvested sustainably to allow for re-plantation and future distillation.
