Filippo Volpi's 2019 Bioselvatico wine is produced with Sangiovese grapes only, comes to life for the first time in the 2018 vintage through the help of two friends, Federico Staderini and Stefano Amerighi and is obtained from vineyards cultivated according to organic viticulture / biodynamic.
Few interventions in the vineyard and in the cellar where everything is aimed at accompanying the best of the harvest until it becomes wine:
graded harvest that allows the pressing with the feet in the vats and with different degrees of ripeness to give complexity to the wine, use of 100% of the whole bunch, fermentation in open tonneaux and subsequent aging in tonneaux used for the first year and in cement the second year for a total of 10000 bt

On the nose, flowers and red fruits, spiciness, earth and blood orange, young in the mouth but with a clear idea of the territory with a tannin that takes time to give its best.
