François Pinon, Vouvray 2018 (750ml)

100% Chenin Blanc. Trois Argiles is named for three parcels of clay-rich soils totalling 3.75 hectares that go into this bottling. They lie on an eastern-facing plateau above Pinon's flinty Silex Noir slopes and are a mix of sandy clay over the classic Vouvray tuffeau (chalky limestone) one and a half meters down; the overall effect is cooler temperatures and lower humidity for Trois Argiles, so there is no botrytis and harvest is a few days later. The vines average 35 years old. They are farmed organically (certified since 2007) and the soils worked by plow. The fruit is harvested manually and goes through a rigorous three-step sorting process from vine to winery. Fermentation is spontaneous and slow, with native yeasts in old wooden vats in the naturally cool cellar carved out of a limestone hillside. It lasts a leisurely two to three months and is arrested by cold with some residual sugar in the wine. The wine is then racked and aged on its fine lees for 4 to 5 months in a variety of used oak barrels and foudres. Made identically but reflecting their different terroirs, Trois Argiles and Silex Noir are both typically rendered as tradtional demi-secs though never labeled as such.
