Farolito Papalometl comes from the prestigious collection of Ulises Torrentera, owner and operator of In Situ Mezcaleria in Oaxaca City.
Farolito Papalometl is made with agave Papalometl (potatorum) in Santa Maria Ixcatlan, Oaxaca. Once cooked and crushed, the agave are fermented in “bovine leather,” which are large cowhides that can be used and reused for years on end. Once feremented, it’s double-distilled in small clay pots.
