At Overnoy-Crinquand, the chardonnay undergoes fermentation in wooden barrels, where it also undergoes malolactic fermentation. The maturation takes place in demi-muid barrels, which have a capacity of 500-600 liters. The wine remains in these barrels for at least two years prior to bottling. There is little to no usage of sulfur dioxide during this aging process. Though the wine isn't intentionally aged "sous voile", it is never refilled during its maturation, and it undergoes a single decanting process. The end result is a wine with an impressive, sturdy acidity, a rich mouthfeel, and a subtly sweet, honey-like aroma and taste. It has a fine quality and a lingering finish dominated by mineral notes.
